Pan-fried salmon on sun-dried tomato salad
Salt salmon skin, pan-fry skin down, baste until nearly done then turn over to finish. Put to one side.
Finely chop sun-dried tomatos and piquanté peppers, add to pan with a squeeze of lemon. Toss quickly with lambs' lettuce and serve.
