Raspberry vinegar mackerel ceviche



Fillet a super fresh mackerel and slice it into 4mm slivers. (Maximum three hours out of the water but on the boat would be incredible.) Feel the pieces carefully and cut out any pin bones. Add a slug of raspberry vinegar, a squeeze of lemon, a sprinkle of finely chopped green chilli and salt and pepper. Mix with your fingers and leave to marinate for ten minutes

Serve.

That's it. Stunning.

Spelt risotto and feather steak with toasted seeds and olives

Make a basic mushroom risotto but use spelt. Decorate with lambs' lettuce, parmesan shavings, sun-dried tomatoes and peppers.

Boned chicken thigh stuffed with Taleggio and olives

Bone chicken thighs and stuff with Taleggio, green olives, fresh basil, paprika, garlic, salt and pepper. Loosely tie with string and cook in a pan for 25 minutes, turning regularly. Serve with sauteéd potatoes (with parmesan) and a tomato sauce.

[Waitrose Queen olives in a jar were more than adequate for this recipe.]
