Mackerel sashimi

Although I substituted white wine vinegar which I'm sure is probably illegal in Japan. Also, the mackerel was only two hours out of the water so I expect I didn't need a 24-hour cure. Will try again.



Baked mackerel

Super fresh Brighton mackerel, salt, pepper oil, bake. I probed it to perfection with my Thermapen.

Served with anchovies, balsamic, aioli and baked some new potatoes I had in the fridge.



Cobnuts

Found them on a bike ride. Lovely little things!



Raspberry mackerel ceviche

Recreated at last! And every bit as good as it was the first time. The addition of balsamic I think takes it to the next level.

It does seem to need a bit of love in prep but cuttlefish can be lovely.

Raspberry vinegar mackerel ceviche



Fillet a super fresh mackerel and slice it into 4mm slivers. (Maximum three hours out of the water but on the boat would be incredible.) Feel the pieces carefully and cut out any pin bones. Add a slug of raspberry vinegar, a squeeze of lemon, a sprinkle of finely chopped green chilli and salt and pepper. Mix with your fingers and leave to marinate for ten minutes

Serve.

That's it. Stunning.
