Squid stuffed with ricotta and chorizo
For the stuffing: ricotta, chorizo, shallots, garlic, white wine, red chilli, rapeseed oil, ground pepper, chopped parsley.
For the sauce: chopped parsley, sherry vinegar, olive oil, lemon, salt, pepper.
