Ham and mushroom pasta





Whole grain Mustard, garlic, 1/4 red chilli, thyme, cider vinegar, white wine, salt, pepper, bay leaf, ham.

Sauce:
Flour, butter, milk.

Parmesan to serve.


Ding dong prawns and lambs' lettuce

Insanely hot, a little sweet, and very addictive.

1 fresh chilli, tsp chilli powder, 2 garlic cloves, half lemon, 1 tbsp smoked paprika, salt, 1 tbsp honey, 1 shallot.

Alternative recipe:
1 green chilli, half onion, 2 garlic cloves, half lime, 1 tsp shrimp paste, 1 tsp paprika, 1/4 tsp chilli powder, 1 tsp sherry vinegar, 2 chopped tomatoes.

Chocolate and beer

Prestat Choxi's bitter, cherry overtones can become a little overpowering; but are balanced perfectly by a glug of Cusqueña's malty goodness. [In the interests of science I also tried a regular Bud. And that worked too.]

Crumbed trout and yellow carrots

Fresh bread crumbs, lemon zest, capers, sun-dried tomatoes, fresh basil, whole-grain mustard, dried chilli, garlic.

Baked for ten minutes, grilled for one.

Aparagus and chilli oil

Bend the asparagus until they snap, and shave the lower end. Fresh pepper, salt, chilli flakes, oil, and lemon juice.

Griddle until just soft.

[I was bought some wildly out-of-season Peruvian asparagus (no less.) Normal season April to June.]

Fry fillet skin-down for the duration of cooking, while basting the upper side with a spoon. Salt in the pan only.
