Sunken apricot cake

For the cake mix: sugar, salt, mixed spice, ground almond, rice flour, butternut squash, carrot, baking powder, three eggs, vanilla essence, apricot halves.

To finish: dust with icing sugar.

Roast lamb leg and roast new potatoes

The lamb
Slash leg and stuff with rosemary and garlic. Roast on a trivet of sliced onions.

The gravy
Remove joint, cover, and put to one side to rest. With the roast tin on the hob, cook out some white wine, add hot stock. Add chopped leeks and cook until tender.

The potatoes
Parboil new potatoes with skins on, rub with salt, garlic, and oil, and put in the bottom of the oven with the lamb for the last fifty minutes of cooking.

Pan-fried salmon on sun-dried tomato salad

Salt salmon skin, pan-fry skin down, baste until nearly done then turn over to finish. Put to one side.

Finely chop sun-dried tomatos and piquanté peppers, add to pan with a squeeze of lemon. Toss quickly with lambs' lettuce and serve.

Roast chicken and puy lentils

With a slow-roasted tomato on the side.
